Producer Background
Ballykilcavan has been home to the Walsh family for over 13 generations, farming the same land since 1639. The brewery was founded by David Walsh-Kemmis, who took the bold step of diversifying the farm by establishing a brewery in a 240-year-old stone mill building. That decision quickly turned heads in the Irish craft beer community, as Ballykilcavan’s beers reflected both exceptional provenance and brewing precision.

The brewery uses estate-grown barley and water from its own well, combined with a focus on traditional styles and seasonal experimentation. Beers such as Bambrick’s Brown Ale and Brickyard Red stand out for their balance and approachability, while limited releases offer innovation without gimmickry. As a member of the Irish Grain Growers’ Guild, Ballykilcavan champions sustainability, biodiversity, and transparency from grain to glass.

Recognised with national and international awards, including accolades at the Blas na hÉireann Irish Food Awards, Ballykilcavan continues to grow while staying firmly rooted in its local identity.
