Ballykilcavan has been home to the Walsh family for over 13 generations, farming the same land since 1639. The brewery was founded by David Walsh-Kemmis, who took the bold step of diversifying the farm by establishing a brewery in a 240-year-old stone mill building. That decision quickly turned heads in the Irish craft beer community, as Ballykilcavan’s beers reflected both exceptional provenance and brewing precision.
The brewery uses estate-grown barley and water from its own well, combined with a focus on traditional styles and seasonal experimentation. Beers such as Bambrick’s Brown Ale and Brickyard Red stand out for their balance and approachability, while limited releases offer innovation without gimmickry.
