About This Beer
Millhouse IPA distils the Ballykilcavan philosophy into a hop-forward flagship: expressive citrus aroma, clean fermentation and a finish that stays crisp and repeatable. Brewed on the Walsh-Kemmis family farm in Stradbally, Co. Laois, it’s an Irish craft beer that puts balance first—bright hop character framed by a quietly supportive malt spine. From the first pour you’ll find lively orange and grapefruit notes, a hint of soft tropical fruit and a neatly measured bitterness that refreshes rather than overwhelms. If your taste runs hoppy, you’ll find kindred cans and bottles across our IPA & Pale Ale collection here: Explore IPA & Pale Ale.
Millhouse is built for versatility. The pale-malt base and tidy attenuation keep the palate clean, while a firm but friendly bitterness resets the taste buds for food or another sip. As the beer warms slightly, hop layers broaden—citrus peel gives way to stone fruit and a light floral thread—while the malt remains present enough to add texture without bringing sweetness. It’s a polished, modern IPA that fits just as well at a sunny barbecue as it does beside a Friday-night takeaway.

About the Brewery
Ballykilcavan Brewery sits on a working family farm just outside Stradbally, Co. Laois. Provenance and sustainability are central to the project: estate-grown barley, careful water stewardship and a focus on freshness from brewhouse to can. The house style is clarity and balance—beers that pour beautifully at home, pair naturally with food and deliver consistent quality. Millhouse IPA exemplifies that ethos, offering flavour-first drinkability with a distinctive Irish accent.
Food Pairings
Millhouse IPA’s citrus lift and crisp finish make it a superb table companion.
Fish tacos with lime and coriander—the hop brightness echoes fresh citrus and herbs.
Buttermilk fried chicken with a squeeze of lemon—bitterness trims the richness, carbonation cleanses the palate.
Chargrilled burgers with cheddar and pickles—citrus and gentle bitterness cut through fat and complement the cheese.
Margherita or pepperoni pizza—hop snap meets tomato sweetness and melted mozzarella.
Salads with vinaigrette (think Caesar or chicken and avocado)—the beer’s dryness mirrors the dressing’s tang.
Cheese board—mature cheddar or Comté for nutty harmony; fresh goat’s cheese for a tangy counterpoint.
