About This Beer
Northern Monk Patrons Project 38.06 Envy is an 8.4% Imperial Stout brewed in collaboration with Dssolvr and artist Adrian Baxter. As part of the Patrons Project series, this release focuses on creativity and pushing flavour boundaries without losing balance.
This is craft beer that leans into indulgence but keeps things controlled. The beer style Imperial Stout is known for strength, body and layered roast character, and Envy delivers that foundation first. Expect dark malt, espresso and bittersweet chocolate at the core. What sets it apart is the addition of matcha, which brings an earthy, gently savoury quality that lifts the beer and prevents it from becoming heavy.
Coconut and lactose add smoothness rather than sugariness, giving the beer a creamy texture that feels more like a well-made dessert than an overly sweet stout. At 8.4%, it carries warmth, but the bitterness (around 30 IBU) keeps the finish clean enough to invite another sip.

About the Brewery
Northern Monk was founded in Leeds and has become one of the UK’s most respected independent breweries. Known for both hop-forward IPAs and robust dark beers, the brewery has built its reputation on quality and collaboration.
The Patrons Project series is central to that identity. Each release brings together brewers, artists and creatives, resulting in limited beers that often explore unusual ingredients or themes. Working with Dssolvr on Envy shows Northern Monk’s confidence in experimenting with flavours like matcha while still delivering a technically strong Imperial Stout.
For craft beer Dublin drinkers looking for something distinctive, Northern Monk’s collaborative releases consistently stand out for their balance and attention to detail.
Food Pairings
This Imperial Stout works beautifully with chocolate-based desserts — think dark chocolate brownies or flourless chocolate cake. The roasted malt echoes the dessert’s richness while the matcha adds contrast.
It also pairs surprisingly well with savoury dishes. Roast duck, glazed pork belly or even mushroom-based dishes pick up on the beer’s earthy notes. Blue cheese is another strong match, with the stout’s body standing up to bold flavours.
