About This Beer
Hope Groac'h West Coast IPA is a bold and intensely hop-forward west coast ipa beer brewed in collaboration between Hope Beer in Dublin and Brasserie Nautile in Nantes. Within the first sip, this beer delivers the crisp bitterness, citrus-heavy hop profile, and dry finish that define classic West Coast brewing, making it a standout release for craft beer Ireland fans looking for assertive ipa beer with modern character. If you enjoy hop-driven beer styles, discover more in our IPA & Pale Ale collection, featuring modern and classic ipa beer from Ireland and beyond.
Inspired by the Groac'h, a shape-shifting sea witch from Breton folklore, the beer channels maritime mythology and the historic connection between Dublin and Nantes, two port cities with deep Celtic and seafaring roots. That darker folklore influence carries through into the beer’s bold, resinous, and intensely aromatic character.
The brewing process uses a double decoction mash alongside mash hopping to build layered malt complexity while maintaining the clean dry structure essential to classic west coast ipa beer. Golden Promise and German Pilsner malt create a crisp malt base that supports the aggressive hop profile without introducing excessive sweetness or heaviness.
Idaho 7, Simcoe, and tropical Dolcita hops dominate throughout with flavours of grapefruit peel, pine resin, orange zest, tropical fruit, and dank hop bitterness. Unlike softer hazy ipa beer styles that prioritise sweetness and juice-forward flavour, Groac'h West Coast IPA focuses on sharp hop definition, bitterness, and refreshing drinkability.
Compared to standard lager beer, this beer delivers significantly greater aroma intensity, bitterness, and flavour complexity while remaining cleaner and more structured than many sweeter stout beer or red ale beer styles. The result is a modern West Coast IPA that stays true to the classic style while incorporating contemporary hop character and collaborative brewing creativity.

Food Pairings
Hope Groac'h West Coast IPA pairs exceptionally well with rich savoury foods and dishes that benefit from strong hop bitterness and citrus freshness. Burgers, grilled meats, barbecue dishes, spicy chicken, and smoked foods all complement the beer’s resinous bitterness and crisp finish.
The citrus-forward hop profile also pairs beautifully with Mexican-inspired dishes, tacos, and spicy Asian foods, where the carbonation and bitterness help refresh the palate between bites. Mature cheddar, blue cheese, and salty snacks also work particularly well alongside the beer’s structured bitterness and dry finish.
