Producer Background
Founded in 2019 by Sean Colohan and Carla Naltchayan, Wide Street Brewing Co was born from a shared passion for fermentation, yeast science, and flavour experimentation. What began as a home-brewing hobby quickly evolved into one of Ireland’s most exciting brewery ventures, with a focus on 100% Brettanomyces and mixed fermentation techniques.
The brewery’s ethos centres on authenticity and innovation: all beers are unfiltered, unpasteurised, and can-conditioned with champagne yeast for a dry finish and layered flavour. Wide Street works with a custom blend of Brettanomyces, saccharomyces, and lactobacillus strains from Bootleg Biology, a specialist yeast lab in Nashville, to deliver beers with a truly distinctive signature. Their output includes everything from saisons and grisettes to farmhouse pilsners and IPAs — all brewed with care, precision, and a desire to push the boundaries of Irish craft beer.
