Wicklow Wolf Locavore Hop Harvest 2025 is a masterclass in craft beer Ireland, brewed by Wicklow Wolf to highlight local hops, barley and yeast in a sustainable, in-house style that underscores the brewery’s ethos. This Bitter – Extra Special / Strong (ESB) at 5.6% ABV features freshly picked hops harvested on brew day, barley malted and roasted specifically for the project, and yeast grown locally — all combining to produce a beer rooted in place and process. Tasting Notes
• Appearance: Golden-amber hue with a fine off-white head and good clarity, hinting at malt richness.
• Aroma: Fresh aromatic hops with grassy, herbal and floral notes, supported by biscuit malt and a subtle toffee sweetness.
• Flavour: Initially malty biscuit and caramel, followed by vibrant hop character – herbal, fresh and slightly resinous, finishing with a dry bitter edge.
