Ballykilcavan An Fheoir Barrel-Aged Saison is a complex farmhouse beer brewed by Ballykilcavan Farm & Brewery, delivering layered character and subtle oak influence for fans of craft beer Ireland and expressive Irish craft beer. Brewed to 6% ABV, this limited-edition saison offers depth without heaviness, making it an ideal choice for customers shopping for craft beer online or visiting a specialist craft beer shop Dublin.

Brewed on the family farm in Co. Laois, An Fheoir is part of our carefully curated Irish Craft Beer range and represents the first release in a trio of barrel-aged saisons. Each beer in the series is matured in a separate Chardonnay barrel and named after one of the Three Sisters rivers, reflecting both Ballykilcavan’s barrel programme and its strong connection to place. For An Fheoir, oak ageing brings gentle acidity, soft tannin, and subtle wine-like complexity to the beer’s rustic saison base.

On the nose, aromas of hay, citrus peel, light spice, and soft oak lead into a dry, refreshing palate with restrained funk and a crisp finish. The barrel influence is balanced and measured, enhancing the beer rather than dominating it. This makes An Fheoir approachable for saison newcomers while still offering depth for more experienced drinkers exploring characterful styles through craft beer Dublin retailers or ordering craft beer delivered nationwide.

If you enjoy expressive farmhouse and mixed-fermentation beers, you can browse similar styles in our sour and lambic collection. You can also explore contrasting styles across our Belgian Beer, German Beer, and wider Irish selections.

About This Beer

Ballykilcavan An Fheoir Barrel-Aged Saison is a limited-edition farmhouse beer brewed with patience, restraint, and a clear sense of place. Produced by Ballykilcavan Farm & Brewery in Co. Laois, this 6% ABV saison is the first of three barrel-aged saisons in a special series. Each beer in the range is matured in a separate Chardonnay barrel and named after one of the Three Sisters rivers, highlighting both the individuality of each barrel and the brewery’s deep local roots.

An Fheoir begins as a traditional saison, built on expressive yeast character and a dry, refreshing base. After fermentation, the beer is matured in oak, allowing gentle acidity, subtle tannin, and soft wine-derived notes to develop naturally. The barrel ageing is deliberately restrained, adding complexity and structure while allowing the saison’s rustic character to remain central.

Tasting Notes

  • Appearance: Light golden to hazy amber with a soft white head

  • Aroma: Hay, citrus peel, light spice, earthy yeast, and subtle oak

  • Flavour: Bright acidity, rustic saison character, gentle oak, and a dry finish

  • Mouthfeel: Medium-bodied with lively carbonation and a crisp, cleansing texture

About the Brewery

Ballykilcavan Farm & Brewery is a family-run Irish brewery based in Stradbally, Co. Laois, with a long agricultural heritage. The brewery was founded to showcase beers brewed using barley grown and malted on the family farm, giving Ballykilcavan full control over ingredients from field to glass. This farm-to-glass philosophy underpins every beer they produce and is particularly evident in beers that emphasise fermentation character and ageing.

Alongside their core range, Ballykilcavan have developed a growing barrel programme focused on balance and subtlety rather than intensity. Their barrel-aged saisons demonstrate a thoughtful approach to wood and fermentation, producing beers that are expressive but measured. This consistency and attention to detail have made the brewery a trusted name among customers ordering craft beer delivered across Ireland or shopping in-store in Dublin.

Food Pairings

Ballykilcavan An Fheoir Barrel-Aged Saison is highly food-friendly thanks to its acidity and dry finish. It pairs well with roast chicken, pork dishes, grilled vegetables, and mushroom-based recipes. The beer’s brightness also complements seafood, particularly shellfish, while its subtle oak character works well with soft and semi-soft cheeses.

Lighter dishes such as salads with citrus or vinaigrette dressings benefit from the beer’s crisp acidity, while rustic breads and farmhouse-style meals echo its saison roots. The dry finish refreshes the palate, making An Fheoir a versatile choice at the table.
