About This Beer
Ballykilcavan An Fheoir Barrel-Aged Saison is a limited-edition farmhouse beer brewed with patience, restraint, and a clear sense of place. Produced by Ballykilcavan Farm & Brewery in Co. Laois, this 6% ABV saison is the first of three barrel-aged saisons in a special series. Each beer in the range is matured in a separate Chardonnay barrel and named after one of the Three Sisters rivers, highlighting both the individuality of each barrel and the brewery’s deep local roots.
An Fheoir begins as a traditional saison, built on expressive yeast character and a dry, refreshing base. After fermentation, the beer is matured in oak, allowing gentle acidity, subtle tannin, and soft wine-derived notes to develop naturally. The barrel ageing is deliberately restrained, adding complexity and structure while allowing the saison’s rustic character to remain central.

About the Brewery
Ballykilcavan Farm & Brewery is a family-run Irish brewery based in Stradbally, Co. Laois, with a long agricultural heritage. The brewery was founded to showcase beers brewed using barley grown and malted on the family farm, giving Ballykilcavan full control over ingredients from field to glass. This farm-to-glass philosophy underpins every beer they produce and is particularly evident in beers that emphasise fermentation character and ageing.
Alongside their core range, Ballykilcavan have developed a growing barrel programme focused on balance and subtlety rather than intensity. Their barrel-aged saisons demonstrate a thoughtful approach to wood and fermentation, producing beers that are expressive but measured. This consistency and attention to detail have made the brewery a trusted name among customers ordering craft beer delivered across Ireland or shopping in-store in Dublin.
Food Pairings
Ballykilcavan An Fheoir Barrel-Aged Saison is highly food-friendly thanks to its acidity and dry finish. It pairs well with roast chicken, pork dishes, grilled vegetables, and mushroom-based recipes. The beer’s brightness also complements seafood, particularly shellfish, while its subtle oak character works well with soft and semi-soft cheeses.
Lighter dishes such as salads with citrus or vinaigrette dressings benefit from the beer’s crisp acidity, while rustic breads and farmhouse-style meals echo its saison roots. The dry finish refreshes the palate, making An Fheoir a versatile choice at the table.
