Timmermans Brewery, originally known as “The Mole Brewery,” has been producing lambic for over 300 years using time-honoured, spontaneous fermentation methods. Located in Belgium’s Pajottenland, the brewery takes full advantage of the region’s unique wild yeast strains, allowing the beer to ferment naturally in open vessels before ageing in oak barrels. The result is a portfolio of beers with signature tartness, earthy funk, and incredible depth.
Timmermans produces a wide range of lambic styles, including traditional oude gueuze, kriek (cherry lambic), and faro, as well as accessible fruit-infused options like strawberry, raspberry, and peach. These beers strike a balance between history and modern drinkability — ideal for both newcomers and connoisseurs.
