Manzanilla – A Fino aged in the coastal town of Sanlúcar de Barrameda, often saltier and fresher.
Amontillado – Begins as a Fino, then aged oxidatively after flor fades. Medium-dry, nutty and rich.
Oloroso – Aged entirely without flor. Fuller, darker, and deeply savoury.
Palo Cortado – Rare hybrid of Fino’s delicacy and Oloroso’s depth.
Pedro Ximénez – Made from sun-dried PX grapes. Syrupy and lusciously sweet.
Cream – A blend of Oloroso and PX, offering balance between sweetness and nuttiness.
