Our Brewery is located in Northern Ireland and represents a long-term brewing and blending project from the team behind Geterbrewed. Inspired by traditional brewing cultures in Belgium, Germany and the Nordics, the brewery specialises in spontaneous fermentation, heritage malt usage, and ex-wine and spirit barrel ageing. From turbid mashing to coolship inoculation, their beers are developed with immense patience and an artisanal mindset.
A key part of their ethos is allowing the natural terroir and ambient yeast of the environment to shape each release. This is achieved through open-air cooling and spontaneous fermentation using native microflora. Large foeders made of Limousine Oak, chosen for their superior ageing potential, are used alongside carefully selected barrels from both wine and spirits producers. The brewery’s exploration of techniques like Keptinis (baked beer) has resulted in deeply layered, complex flavours that blur the lines between beer, wine, and even culinary science.
While the focus is on slow, wild fermentation and blending, Our Brewery also maintains a small production of fresh beers to support operations. However, the core identity is rooted in experimentation, natural fermentation, and brewing that celebrates time, terroir, and sensory depth.
