Founded by Shane Kelly in 2015, Dot Brew was born out of a passion for experimental brewing and a desire to showcase Ireland’s creative potential. Based in Dublin 7, Dot Brew doesn't operate a traditional brewhouse. Instead, it partners with local breweries to create wort, which is then aged, blended, and fermented by Dot in their own urban facility. This gypsy-style approach allows for exceptional flexibility and innovation, with much of their focus placed on barrel ageing, mixed fermentation, and blending across different wood types and beer styles.
