There was once a distillery in Dunfermline, an estate on the North-East coast of Grenada, but it was destroyed by Hurricane Ivan. Happily the clay loam is well suited to cane cultivation, and this terroir-driven distillation uses a particularly sucrose-rich sugar variety called Lacalome Red in a terroir known as Mango Lane.
Column stills are able to distil to higher strength and purity resulting in a lighter, cleaner spirit. This pre-casked expression provides a fascinating comparison to the pot distilled version which also used cane from the Dunfermline estate.
